The "Land, Climate and Taste" tour with tasting
is a cultural and educational experience to fully understand the complexity of the different ecosystems involved in the preservation, improvement, and regeneration of rural areas. From the genesis of the soil to the tasting ritual, from modern agronomic and oenological techniques to the qualitative production of eco-sustainable wines in the age of climate change.
All topics will be covered directly in the vineyard/cellar and addressed in a simple way, so that even apparently complicated concepts can be easily understood.
The winery tour will be followed by a
guided sensory tasting session to capture and break down the different organoleptic profiles that participate in the complexity of our vintage and private reserve wines. Finally, you will enjoy a
full lunch with the right food and wine pairings that will delight your palate and nourish your soul.
Visit to the Vineyards:
From pruning to harvesting
In a very simple way, directly in the vineyards, we will talk about the agronomic cycle of our organic grapes with the help of genetics, physiology, ecology, pruning, handling of the soil and harvesting.
Visit to the Cellar:
Microorganisms, the real protagonists of the grape-to-wine process
How does climate change affect the sensory profile of a wine? In our cellar, we will examine the basic concepts of quality winemaking from an unusual point of view: that of microorganisms, the real protagonists of the grape-to-wine process.
Sensorial Tasting:
Wine Emotion
In our exclusive tasting room, we will approach 5 of our vintage and private reserve organic wines, with sight, smell, and taste, to capture what we love most about wine: the complex world of emotions.
Full Lunch:
Combining Food and Wine
Your tasting session will end with a full lunch, prepared according to seasonal menus to delight your palate, paired with our wines and organic extra virgin olive oil.
