Vine, Wine and Life: From pruning to the rite of tasting
The visit with wine tasting “Vine, Wine and Life” is a journey through space and time that starts with the winter pruning of our vines and ends up with the rite of tasting
, passing through the know-how for growing the typical vines of our “Terroir” and the oenology techniques for producing quality wines at low environmental impact.
All the different chapters will be discussed directly in the vineyards/cellars in a very simple way, in order to easily understand even the most apparently complicated concepts
After our guided tour, “Vine, Wine and Life” will go on with a guided sensorial tasting
to grasp and break down all the different sensorial notes that make the complexity of our wines. The visit will end up with a typical light-lunch
with fresh seasonal products.
Visit to the Vineyards: From pruning to harvesting
In a very simple way, directly in the vineyards, we will talk about the agronomic cycle of our organic grapes with the help of genetics, physiology, ecology, pruning, handling of the soil and harvesting.
Visit to the Cellar: From crushing of grapes to maturation of wine
In the cellar we will take into consideration the basic concepts for a quality wine making, analyzing the chemical, physical and microbiological details of our wines, during all the main steps of the process from grape to wine: stemming-crushing, alcoholic fermentation, maceration, malolatic fermentation, racking off, stabilizing, bottling and refinement.
In our equipped tasting room we will taste 4 of our organic wines, all typical of the area, in order to understand all the sensorial notes with the help of our eyes, nose and palate. A triumph of perceptions to exalt what we love most about wine: the complex world of emotions.
The tasting will end up with a “light-lunch” combining wine and food. We will offer seasonal menus in order to satisfy the palate and keep a health body, combining food with one of our wines and with our organic extra-virgin olive oil.
